Japanese curry culture has evolved independently, incorporating French cuisine into curry introduced from Britain. In 1973, Bondy was the first company in Japan to use the term “European curry”. The founder, Koichi Murata, who studied in France, added demiglace sauce to create a curry which has the exquisite umami flavour of a secret blend of spices and fruit.
